I think it’s a good move, because if the publicity causes customers to ask questions, restaurants will start to feel the pressure and pass that on to their suppliers, and on up the distribution chain for food ingredients. This will result in a reallocation of resources by suppliers and more availability of trans-fat-free food ingredients for restaurants to use.
Let’s just hope that saturated fats don’t end up replacing the trans fats.
